The 100 zebra setting is used to judge maximum brightness in areas of the recorded image and is meant as an aid to keep from blowing out highlight details or exceeding broadcast luminance limitations.

Most cameras actually record up to 110% of the broadcast limit for luminance. This allows for correction of bright areas in post production which is why when you record, you may actually see detail in areas that show zebra pattern when set to 100.
